I would like to try this recipe. Anyone know if I can leave it in the fridge for a few hours and only bake it right before?

it says in the link
"You can prepare the batter through step two up to two hours ahead; refrigerate, covered. Before baking, uncover, and bring batter to room temperature."

You can do this with any baked good, FYI. With yeasted recipes you can let them rise in the fridge overnight and then do their second rise while they are coming to room temp, then bake. For chemically leavened recipes (baking powder or sodium bicarb/baking soda) you can leave the batter in the fridge for at least a few days and then bake...you can actually bake them straight away and they will be fine...it's what they do with muffins and cookies at bakeries...
