ISO a delicious potato kugel

Over the past yr., my potato kugel has been coming out gross (at least in my opinion). Anyway, I have boys a lot and need to come up w/ a delicious potato kugel. Any ideas? I like to make it by hand w/ a grater.

WHAT!! I can't be anonymous?!!!! Maybe the boys are on here.... (lol Wink )

What is your usual recipe?
I don't have a real recipe, but it usually comes out pretty good (if I may say so myself;)).

Do you:
- Preheat the oil and then pour on top of your mixture right before placing in the oven?
- Add lots of salt and pepper?
- Add a zucchini for creaminess and a bit more taste?
- Bake on a high temperature for the first twenty minutes toake the top crispy?

These are all helpful tips I've gotten and use every time.

This is how I make it every Friday and we love it.

1 lb yellow potatoes( not Idaho, these are more expensive but make all the difference)
1 lg onion

Preheat oven to 400.
Peel and grate the potatoes and onion. In a separate bowl whisk 6 eggs. Add 2 tbsp Kosher salt and some white pepper to taste.

To potato mixture add 3/4 c. Oil and 3/4 c. Seltzer. Mix.
Add the egg mixture to this and mix.

Grease a 9x13 pan and put it into oven until sizzling.

Pour in kugel mixture .

Bake for 1 hour and 45 mins.

5 lbs potatoes
2 onions
3/4 c oil (heat up in oven while prepping e/t)
3.5 tsp salt
black pepper
8 eggs

bake 2-3 hours on 350.
to overnite it: once baked cover tightly and put on top rack and place pan of water on bottom rack.
set oven to low temp (220) for 7+ hours.

I don't know what size you want, but adjust it accordingly. It's delicious.
Preheat over to 350
8 Potatoes
5 Eggs
1/4 cup seltzer
1/4 oil
salt, pepper to taste
Mix all of the ingredients (except for the potatoes)....
Now, hand grate the potatoes on the horizontal side (so not the really small circles, the medium size ones). You have to do this really really fast or your potatoes will not stay white and beautiful.
After all potatoes have been grated pour the mixture on top, mix well, and put into the oven. You may also fry it if that's your thing.

I was taught to put an egg for every large potato.

For a nine by thirteen I usually put half a cup oil plus another quarter cup that I heat and pour on top of the batter right before I put it in a very hot oven.

Also put onion in food processor first. It keeps the potatoes white.

I like yellow potatoes too but find the kugel's a bit gummy. I use half yellow, half regular (Idaho, russet, whatever I have).

Perfect, no fail potato kugel that doesn't need a food processor is the lacy potato kugel from the kosher pallete. Here is a web version of it, the only difference is the original recipe does not call for sauteing the onions first so feel free to skip that out, and I just grate them I don't bother dicing some and grating some.

I actually got this suggestion on here a while ago.

If you 1.5 the recipe it makes 3 smaller rectangle pans (not sure what they're called, not loaf pans but not 9x13, and not one size under 9x13, probably 8 or 9 inch pans)

Thanks everyone! My old recipe s/t came out decent, well DH liked it. I just didn't... not sure why. I am excited to try some new ones until I find one that's really good.

Jamie Geller's recipe hasn't failed me yet. It does involve heating the oil and the pans, but it's totally worth it, and it's gluten free, which is useful.

this is my go to recipe:
5 lb potatoes
5 eggs
1/2 cup oil
1/4 cup water
1 tbsp salt
dash pepper
Mix oil,water, salt, and pepper in large bowl. Add shredded/grated potatoes - I use the braun food processor - blade "e". Pour into 9x13 and another small pan or two(1 lb pans)

bake at 400 for 45 min and then 350 for 1 hour - makes a 9x13 pan and one or two additional small ones.....
always comes out delicious!!

Edited to add eggs!

I find that when I make a 9x13 it comes out awful, but an 8 inch square is delicious. So if I'm having company I"ll make 2 8" squares. Maybe it's all in my head but it works for me!

Simcha or anytime potato kugel!

This is a no fail recipe for 9x13
Line pan with parchment paper

9 loose potatoes
9 eggs
1 cup oil
1 cup warm water
1 tablespoon salt
Half an onion (optional)
TIP: pour a bit of oil over blades of processor or grater to avoid browning of potatoes.
Bake 1 hour on *450
Another hour on *350
Enjoy!
To make overnight potato kugel, pour a cup of water over top and sides of kugel and cover tightly. Place a deep pan of water on bottom shelf and put kugel on top shelf.
Bake on *250

for a 9x13

7 idaho potatoes
8 eggs
1 cup oil (hot)
salt and pepper

Bake on 550 for a half hour
350 for an hour and a half
and then 250 for 2-3 hours (to make it taste like overnight kugel

throw into food processor 4 or 5 potatoes
1 egg per potato so that makes 4 or 5 eggs
medium onion
couple of garlic cloves
salt [a little mound in your hand]
black pepper
garlic powder

turn on the food processor for a few [just to blend and grind not mush]

pour into heated up a frying pan with added olive oil

fry on low flame - when it looks brownish - flip onto plate & slide it back into pan to fry the other side [about 30 minutes each side]

taste like a big latke ... please don't forget to share with your whole family
