Tuna melts. but usually grilled cheese with different cheeses and different sauces. Think pasta sauce, pizza sauce, or just plain ketchup.

just think of what you like in your sandwiches
sauteed onions and veggies with cheese
tuna salad with cheese
mayo, avocado slice, tomato slice
marinara with cheese
pesto with cheese
everything will have to be very thinly sliced, skinny sandwiches only or else everything will spill out when you put on the top cover
you can also make
french toast
pancakes
omelettes

Paninis on rolls with cheese, pesto, roasted veggies, etc. Feta is good in a panini, and so is mozzarella. Just no lettuce because it gets unpleasantly wilty.
ETA that if it's the sandwich maker that makes little sealed triangles, the infomercial back in the day made little apple pies using squishy white bread and apple pie filling. I'd try thinly sliced fresh apple and Nutella as a filling.
