Chol Hamoed with limited equipment - what to make?

I know this is early, but starting to get worried...

We are with my in-laws for first day yom tov and hoping to be invited out for last days, but I still have to cover 3 days of chol hamoed meals (we fly home late on first day chol). This is the first time we are doing any part of Pesach ourselves since I got married to my Ashki husband and can no longer eat kitniyot :-(

Atm we have the following to cook on:

Electric hob and some cheap parve pots
Meaty George Foreman grill
Small meaty slow cooker

We will probably also get a cheap microwave, and need to check with FIL whether it's the family minhag to use the oven during Pesach if it's been cleaned and kashered before (this would make a huuugge difference).

So, what can I make using these things? Trying to minimise meaty stuff as we'll be eating meaty on yom tov, but realise it'd be much easier to make meaty than milky/parve...

(Btw, we eat quinoa and gebrokts).

matzo pizza
matzo brie
omelletes, egg salad
tuna fish
yogurts
gefilte fish

also you can make soups in the crock pot
potato soup
vegetable soup
broccoli soup
I'm sure there are others

Could you get an electric fry pan and use it for milchigs? On chol ha moed we make cheese-eggs and also can do potatoes and cheese in there. You can use egg plant and cottage cheese and do lasagna. If you do quinoa, you could also make that with cheese. We make cheese cakes in ours. You can also make fish in the electric fry pan.

Just remembered we do have a small fry pan I can use on the hob :-)

Make some batches of soup (minestrone, potato & leek, butternut squash) and freeze.
Get a frying pan, make omelettes (or even better frittata with grated carrots or zucchinii)
Boil enough potatoes and hardboiled eggs--good for potato or egg salad, potato can be made into country hash with sauteed onions.
Different kinds of salads--tomato, avocado, green salad. Vegetable sticks.
Serve matza and creamcheese or butter.

breakfasts:
yogurt with pesach granola
mushroom stuffed omelettes with matzo and cream cheese/butter
cottage cheese with cubed melon and some matzo

lunches:
tuna stuffed peppers, pesach crackers
deviled eggs with avocado spread on matzo
nut crusted fried eggplant in parve pan - remove from pan while boiling hot and add cheese so it melts

dinners:
grilled chicken and veggies on the foreman, 2 color potato salad cooked in pot
meatballs in the slow cooker with veggies and sauce, mashed potatoes in the pot over the hob
burgers on the foreman, french fries in a pot, fresh salad

I would do simple. Eggs, omelettes or pancakes for breakfast, matza and spreads for lunch, (egg and avocado mixed is yum) and maybe salad in a plastic container, and grilled fish, chiicken or meat for supper with salads and potatoes or quinoa. You will be fine.

you can make extra meat for supper and have it cold with salad for lunch.

I don't think you need to buy any more equipment.

Then I would just grab cottage cheese, yogurt or cheese snack and a matzo for breakfast.
Leftovers from dinner taken in a container for lunch.
And I would utilize the crockpot so that you can come home to a hot meal. Meatballs, "roasted" chicken or a stew. You can make a side dish with the appliances you have when you get home.
