How would I know. I went to butcher and bought a pickled chicken roll. What are these things usually?

It is the dark and white meat of a boned out chicken put back in the whole skin and rolled and tied. It's called pickled because it is usually cooked in brine. (Once it's been boiled in brine, it is usually served chilled).
