Lemon curd is naturally fine for pesach, just eggs lemon sugar butter ( or margarine). I can't remember what recipe I like but I use one with much less butter than other recipes.

This lemon curd recipe comes out great--I just omit the butter: http://www.joyofbaking.com/LemonCurd.html

I make a huge batch every Pesach. You can also make lime or orange/tangerine curd. All delicious.

Granita is another easy dessert...basically frozen sweetened fruit juice/puree and you scrape it up with a fork to make a snow-like consistency.

whip up whip cream
melt chocolate chips in a double boiler
fold together and you have chocolate mousse

if you can find kosher l'pesach pie crust you can put in there to make it nicer and make a sprinkle layer or chocolate shreds
