Please help! I will be having a guest for first days who is allergic to eggs, and all of my pesach dessert recipes have many, many eggs. I am looking for cookie, cake and bars recipes. Said guest happens to be a big nosher with a sweet tooth, so I don't want to just serve fruit. I try not to use whip, because it seems toxic, but if I need to, I suppose I will.
(I also have a few celiac to consider, but I suppose I can make separate desires to accommodate the different restrictions.)
If there are pesach dessert recipes already on this site without eggs, please post links, as I could not find any!

Nut brittle
Ice cream made with whip
You can even put those together and make chocolate syrup as well
3 layer sorbet
Boxed cakes or cookie mixes mixed with soda instead of eggs/oil.

Author is paleo/gluten-free, so her recipes are very Pesach-friendly. Lots of snack and dessert options here, and she's a pretty reliable source for good recipes: I've done several and always been happy with them.

whip up whip cream
melt chocolate chips in a double boiler
fold together and you have chocolate mousse
if you can find kosher l'pesach pie crust you can put in there to make it nicer and make a sprinkle layer or chocolate shreds

elanas pantry calls for ingredients the, while not chametz, are not likely to be available with KLP hashgacha.

I know you said you don't want to just do fruit, but have you seen the watermellon cakes? You can find them on pinterest. Its basically a pealed watermelon, cut off the top and bottom, frost with whip cream (or cocunut cream) and decorated with sliced almonds and other sliced fruit. it looks really pretty.
You can serve that along with cookies for the other guests.

If you use products:
Let one box of any "red" flavored jello gel in one cup of water. Blend with 1 lb. strawberries and 1 c. milk substitute, serve as soup.
During the year, there are dye-free jellos available and non-nut kitniyos milk substitutes.

lemon sorbet
4 c water
1,5 c lemomnjuice
2,5 c sugar
boil, cool, freeze, serve in halved lemons / lemonpeels top with strawberrysauce ( blend strawberries + sugar)
