I would love some new recipes for salads and dips. I don't like the taste of store bought Pesach mayo (and don't want to make my own because of raw egg fears) so that stops me from using many recipes. Would love salad dressing recipes too!
No problem with gebrokts etc. basically- if it isn't chometz or kitniyot we are good with it!
I love eggplant dips in particular but not sure how to make it without mayo...

Eggplant dip
Grill eggplant in oven
Cool, peal
Place in food processor add to taste
Olive oil
Salt
Garlic
Pepper
Lemon juice
You can make
Roasted Beet salad
Roasted eggplant slices
Moroccan Carrot Salad
Cucumber salad
Coleslaw with a vinegrette instead of mayo
Carrot and celery cooked in tomato lemon sauce served cold
Israeli salad
Heart of Palm mushroom red onion tossed with olive oil salt and parsley
If you use quinoa you can make tabouli

How do you grill the eggplant? Slice in half and bake? My FP is pareve so don't want to put cooked items in it. Unless I do it first before the meat? How long does it last in the fridge?
