Milchig supper ideas?

Everyone's sick and tired of eating fleishigs... we've been eating omelettes for breakfast/ lunch. Any milchig ideas for suppers? My kids don't like fish..

Eggplant Parmesan
Zucchini stuffed with cottage cheese, ground veggies, and topped with a little melted cheddar
French onion soup
Veggie soup with melted cheese
Loaded baked potatoes (top with sour cream/ cheese'/chives)

Zucchini lasagna, Caesar cheese salad, veggie stix with ranch dip

Eggplant parmesan, Greek salad, onion soup

Mushroom cheese quiche (clueless or nut dough), stuffed potatoes

Portobello mushroom pizza and French fries

Backed salmon, tri color fries, leafy salad

Stuffed potebello mushrooms.
Stuff the mushroom with quinoa or with other veggies ( mushroom stems, onions peppers, squash) bake with cheese!

Fill a bowl of water. You don't want to soak the matzah, just dampen it.
Grease a nine by thirteen, layer with matzah to cover, use your regular lasagna sauce with cottage cheese, etc., spread layer, sprinkle with cheese, repeat a few times, bake. I don't remember for how long, maybe half an hour, uncovered.

I make Matzah pizza. It is very similar to lasagna.
You can also add veggies on top to make it healthier. My kids love it.
