Meals on a budget

I am in the moment on a very tried budget.
So NO meaty menus.
I am looking for cheap menus I can give to my family.
I need Ideas!!!!

what are your feelings on dried legumes? I make falafel out of lentils once in a while (chickpeas would be more traditional). vegetable soup, omelets? meatless stir-fry? lasagna? what are your feelings on dairy, how much time do you have for food prep?

Three of my favorite easy and inexpensive meals:

PiƱata Stuffing
make a pot of brown rice
while the rice is cooking, mix together in another pot:
1 packet of taco seasoning (look online, you can also make your own with cumin, garlic salt, etc.)
1 can each of: black beans, diced tomatoes, corn, and a small tin of jalepeno peppers
Mix it all together and serve -- it's good hot and cold. Sometimes I serve it with tortillas or tortilla chips

Quinoa White Bean Soup
dice: 1 small yellow onion, 2 stalks celery, 2 large carrots
sautee in a large pot with 4tbs olive oil
add in 1 can each of: diced tomatoes, white beans
and 6c chicken broth (I used the powdered mix + 6c water)
Simmer for 20 minutes
Then add quinoa (this can be a little expensive but it's great protein and a little goes a long way -- you can add between 1/3c-1c)
Simmer for 15 minutes more to let the quinoa cook
Season with salt, pepper, and oregano to taste
This is one that tastes even better the second day, because it gives the quinoa time to soak up the flavor and it gets heartier

No-Boil Manicotti
Line the bottom of a pan with pasta sauce
Mix together cottage cheese and ricotta cheese in a gallon-sized freezer bag, add salt and pepper
Cut open a corner of the bag and use it like a pastry bag to fill unboiled manicotti noodles
Place them in the pan and cover with another layer of sauce (add shredded cheese on top if you want, but you don't have to)
Cover and bake for 60min+ (depends on your oven, longer is better for softer noodles)

you can make a salmon loaf with canned salmon or salmon patties which is only a bit more than tuna but can add a different taste to your meal.

you can make casseroles with veggies and noodles and some canned fish or you can make one with potatoes cheese and broccoli or zucchini
