I am not sure if this should be under healthy cooking or womens health but we will try this.
I solved a huge digestive problem (IBS-C) by going on a spelt only diet almost two years ago. I feel much more normal although not perfect. Most of the time I am okay with making everything myself or buying GF products.
I was reading somewhere that people have had success with sprouted whole wheat. This opens a few more doors for convenience but its not worth it to me if my problems come back. Has anyone found that they can tolerate sprouted wheat when they cannot tolerate the normal kind?

I saw no difference with sprouted wheat. Sourdough was a bit better than sprouted. Sourdough spelt is the best though.

there is also sprouted spelt which I use in my challah. Does anyone have a recipe for sourdough spelt bread? Is making the "sponge" any different?

I agree that fermented (sourdough) will be easier to digest than just sprouted.

I make sourdough spelt bread/challah/ baked goods exactly as I would wheat. No difference.

I would recommend trying grain free for a while over sprouted wheat to see if that alleviates your problems.
