So not actually made a proper menu, eating out 1/2 meals but got a list of things I want to make.
Blintzes
Cheese cake
Flower cookies
Stuffed pasta shells
Salmon
Onion soup
Liver
Meat
Stir fry noodles
Garlic rolls
I don't think will be eating loads at each meal because there are so many meals. I prefer to make a few foods and eat more of them as opposed to making loads and chucking half of it out!!!
Will get there eventually!!! It's only me and dh I think but I like to make it nice!

I don't have a menu yet, but this past shabbos, I served a milichig meal and IMO, it was quite good. My kids eat so much kiddush in shul, I don't serve a lot by the seuda. Anyway, we had the regular, challah and dips, eggs, lettuce salad (salsa and mayo one), and my dh brought back with him from NY some fancy cheeses. It was perfect and delicious. I served other cheeses for the kids who don't like the fancy ones.

my menu keeps changing, so this is my current one:
saturday night:
salmon salad
crustless quiche
mushroom stuffed zucchini
sea bas (my husband makes it)
asparagus
stuffed salmon
spinach and mushroom lasagna (saw the recipe here)
dessert is either vanilla mint trifle or chocolate mousse
sunday lunch:
steak mango salad
corn beef
sticky potatoes
pineapple kugel
garlic green beans
sweet potato fries
broccoli kugel
same dessert
sunday night:
baked tongue (will get the recipe from my mother in law)
rib eye steaks with mushrooms
garlic gren beans
stuffed portabellos
chicken
roasted potatoes
again same dessert
monday lunch:
we are going out
amother, can you please post the recipes for your quiches? and can they be made crustless?
saw, can you please post the recipe for the garlic roasted asparagus?

Shabbos will be usual Shabbos fare.
We are home one Shavuos day meal and I plan to keep it pareve. Use salmon as main dish. Followed by a milchige dessert.
Some kind of soup
Dill poached salmon
Califlower kuglet
Rice salad (morrocan with raisins, scallions, celery, chick peas, curry, cumin and fresh lemon juice.
Green beans with honey, soy sauce and sesame seeds.
Carrot salad
Beet salad
Vanilla yogurt ice cream
Frozen mango
Frozen strawberries
Fresh nuts
Hot coffee
Night meal one
Chinese wonton soup
Meat stir fry with fresh veggies
Plain rice
Baked egg roll
Night meal number two
Chinese wonton soup
Teriyaki chicken breast
Shnitzel
Potato kuglet
Cole slaw
Beet salad
Carrot salad

Dinners will be light after what I anticipate will be heavy lunches. Salmon, green beans, orzo and salad one night. Maybe sushi salad, or French onion soup, the other. Or DS has recently taught himself to make 2 or 3 pasta dishes, so maybe we'll let him cook!

beginning of a pregnancy and feeling rotten and working like crazy
regular shabbos
Motzei Shabbos
salmon wellington
roast
cabbage and noodles
broccoli kugel
carrot muffins
Sunday day (with company)
appetizer - not decided yet forsure but maybe plated sushi salad w/ salmon on top
mini pizzas
penne ala vodka
caesar salad
haven't decided what else
Sunday night
potato knishes
grilled cutlets
kielbasa in dough
pastrami orzo
apple kugel
no fancy desserts, biscotti baked, will try to bake one more thing
and make some kind of milchige dessert

Broccoli quiche
1lb frozen chopped broccoli, defrosted
1 onion, fried until clear
4 eggs
3/4 c milk
1/4 t baking powder
Salt and pepper to taste
1 c shredded cheddar cheese divided
Beat eggs with milk, salt and pepper and baking powder
Mix with broccoli and onion and 1/2 c cheese
Pour into prepared quiche crusts (I usually just make it in a pie pans with no crust)
350 for 20 min
Sprinkle top with remaining cheddar cheese
Return to oven for 7-10 minutes or until cheese start to bubble and brown
Mushroom Quiche
2 sm cans sliced mushrooms, drained
1 sm onion chopped and sautéed until soft
3 eggs
3/4 c non dairy creamer
1/4 t nutmeg
salt and pepper to taste
1 c . mozzarella cheese, divided
Follow directions above. This one does better in a crust

That's why I already have a menu! I divided everything up based on freezability (I made up that word), how long it takes to make, how long it lasts in the fridge, etc. Then I made a list of 2-3 things to make a day from now until Shavuos. Nothing takes longer than 15 minutes of prep time, so we'd talking maximum 40 minutes a night. Some things I'll make on YT, but I try for simple, yummy meals that I can (mostly) prep in advance.

Blintzes
Soup (for cream soup, omit the cream and add it fresh when reheating)
Rice (add cranberries before serving)
Mashed potatoes (omit extra liquid)
Pesto (add cream when heating)
Tomato cream sauce can be started and frozen, add cream when reheating
Sautéed onions for parsley red potatoes
Cheesecake
Shortcake without the cream
Some of the other items can be made a few days before and keep well in the fridge like cream sauce salmon and salad dressings, pasta stored properly on its own without sauce.
I stagger the cooking, 2 dishes a night so it's but overwhelming. I leave the oven / roasting dishes for last as I can use disposable tins and not mess up the kitchen close to Yom Tov.
Know how to reheat, that completes the trick.

Also cut corners. Buy ready blintzes. Buy frozen tortellini and make a simple two ingredient marinara cream sauce on Yom Tov to go with it. Use frozen asparagus, frozen broccoli and steam fresh on plata on Yom Tov. Make no bake cheesecake. Use store bought graham cracker pie crusts. Things like that.

My secret is I will be serving one main, one side, one salad at each meal ( like fresh pizza, big salad and broccoli) buy some dips and ice cream and cheese to make it more festive. I will mostly cook on yomtov.
