The breaded cutlets with almond flour seems interesting. If possible can you post exact measurements also any other recipes using almond flour which are low fat would be very much welcomed

16oz crushed pineapple
1/2 c sugar (I sometimes use raw organic)
1/2 c oil (I sometimes use coconut)
4-5 TBSP potato starch or flour (I use gluten free)
4 eggs
1 tsp baking powder
1 tsp vanilla

Pour into square pan, bake uncovered on 350 until starts to brown (about 35 mins, but each oven is different)

It's really good and I usually make two at a time so I have one for snacking and one for whatever meal I'm making it for.

I do a salsa flounder that is really easy.

1 box of frozen flounder.
salsa

Take the frozen brick of flounder and place it in a baking pan. Pour over the salsa and bake covered for 45min - 1hr. You now have a loaf that can be sliced into nice pieces. I garnish the plate with salad greens and corn chips. Can be served warm or cold.

I get compliments on this dish every time. Mostly people wonder what fish it is and would never guess it's made from frozen flounder.
