I have not made this but I did eat this at Reserve Cut and it was delicious. Would love to make it but didn't know where to get some of the ingredients and also its so expensive for so little.

I'll post the recipe later if I have a chance. For those of you who tried it at Reserve Cut, was the pinapple-tomato salsa also good, or just the meat? Debating about whether to make that as part of the recipe

I made this for Shavuous- I tasted a rib and it was really delicious! I skipped the jalapenos because we don't like things too spicy.

FWIW, Chipotle peppers don't make a dish particularly spicy - especially in the amount in this recipe. They are in a smoked sauce that has a very distinctive flavor. That's why the the recipe is called "Smoked Short Ribs". These are sold in a can with the smoky sauce.

I can't tell you what store but there are a lot of brands. You can google kosher chipotle peppers. They should be readily available especially since Mexican food has become more popular among frum.
Also chowhound has a forum for kosher foodies and it is a great source for finding ingredients.

I didn't find the peppers. But I just threw in a few whole jalapenos and a bit of liquid smoke to try to get close to the same effect. I'll let you know after yt if it came out good!

I used bone in ribs and cooked it in the crockpot. We had it for shabbos lunch. They were really good. I left out the chipotle peppers because I had a cooking disaster once that involved a can of chipotle peppers but next time I might try it.
A great lunch. I will definitely make them again.
