I'm usually not the one to post recipes.... Cuz I've got a kitchen complex but I decided to share this one.
Needed something dif than the standard breaded chicken cutlets finally and had some turkey cutlets in the freezer.
Searched recipes, didn't have most ingredients and all looked too complicated.
Found an easy one and didn't have everything but kind of experimented based on the recipe and came out really yummy!
Abt a lb of turkey cutlets
Salt and pepper
1/4 cup flour
Oil
Sauce:
1/2 cup OJ
Few squirts of dijon or deli mustard
Tablespoon of cranberry sauce
(Called for dried cranberries but I didn't have)
Cut the cutlets into long strips.
Sprinkle the cutlets with salt and pepper and then dip both sides in flour to coat. Shake off excess
Heat up oil in pan and brown the cutlets on both sides til golden brown (just a few min each side).
In a bowl mix sauce ingredients chopping up the cranberry sauce into little pieces. (Not sure necessary) and then pour into pan over the cutlets. stir and cook on medium for abt 5 min.
Serve with rice and cooked veggies and really yum!
Even got my 18 mth old who refuses to eat chicken or meat to eat it mixed with rice.
Feel free to experiment more adding in any fruits or vegs that u think may go in the mix....
Enjoy and pat on my back for making a "dif" supper that actually came out good!
