Onion flakes sprinkled on top (or mixed into the dough if you want it even more "oniony").

I like to use the everything spice from bakers choice... It's like what everything bagels have on top

I make my own "everything spice" by combining sesame, poppy, garlic flakes, and onion flakes. Egg Challah, then sprinkle on topping. Or buy the baker's choice.

I've never tried this before but: Zatar Spice.

Susie Fishbein has two savory challah ideas:
Rosemary Olive: knead the olives in, sprinkle rosemary and salt on top.
Spiced Pull Apart: dip each ball into a diff topping after egging (za'atar, chili, turmeric, curry, sunflower seeds, pesto, garlic-oil-parsley mix, dried onion)
I'm sure each is good on its own too.
