...and I am totally clueless on how to begin. My kids are 7.5, 6.5, 5.5, and 2.75. Regular size kids, on the higher percentiles. Please help me choose what to buy!

What car do you have lined up to buy? I assume your oldest is over 40 lbs? If so, maybe a Bubble Bum so you can get a few carseats/boosters in a row http://amzn.to/1BiFbpE which is what we did for our narrowest seat.
The best booster for 30-40 lbs IMO is the Harmony Literider from Walmart for about $13.
Your almost 3 yo can either be RF or FF; how do you plan on facing her? RF is safest but it is your decision. Tons of options available for that range....feel free to email me too!

Not sure about the car yet...looking in a minivan. Probably either a Sienna or Odessey. Possibly the Sedona.
At what age to kids need boosters with the back?

Boosters with a back are required for seats with no headrest.
They are also better for longer car trips, and if you have some with side impact protection, those are great too.
However, after speaking with CPSTs, I was basically told that boosters with back vs backless booster don't change safety statistics provided the child is sitting safely. By the time I am putting my children in boosters after training them to sit properly, I am comfortable with backless boosters for most car trips. I do have one high back that we use on longer ones but because my car has every seat taken with our car seats and boosters, it's too hard for daily use due to the need to move it all the time.
I know that's a non-answer
