Ok I'll try 2 explain the cover is hard plastic and after opening that there is a plastic seal that is blown up

"Blown up" means exploded. If a jar of coffee was blown up there'd be coffee and glass shards all over your house.
Please explain more clearly.

Correct word to use would've been swollen
Like when a bottle of orange juice is swollen it means its not good. I don't know anything about coffee, but is there an expiration date?

Many individuals use "blown up" interchangeably with "swollen."
Anyways, a variety of words would have sufficed: inflated, swollen, bulging, enlarged, expanded, puffy, etc. The OP's first language may not be English so she may not have understood the proper words to use to explain the situation. Anyways, cans and bottles expand for many reasons: you're supposed to dispose of such cans and bottles (and not eat from them) because unless you have a science laboratory in your home and are a qualified chemist, you won't know what gases contributed to the expansion.
