Where is he taking them? Is there refrigeration?
There are great thermos containers with wide mouths so one can use for stews, chile or other hot dishes.
Grain based salads travel well.
You can package components separately for a good salad. Does he have a fridge at work? I used to take bagged greens and also plastic containers if cut up veggies and then some cut up chicken. At lunch I would mix what I wanted together with salad dressing that I kept separately.

Shnitzel or Grilled chicken tastes good cold.
With cut up veggies in a Baggie and some dressing or chumus in another Baggie or small container
Or
Pasta salad with mixed veggies(frozen) and a light vinegrette is easy to take along
Sandwich/wrap/pita with any filling my favorite is chicken salad
Cubed chicken
Celery
Cubed Apple
Mayo
Lettuce tomato cheese sandwich
Cereal and almond milk (or other) that comes in the little boxes
With a peanut butter sandwich. I put slices of banana instead of jelly on whole wheat bread
This post is getting me hungry
