I was just looking for a thread like this Smile

Making dairy ww cinnamon buns, onion soup (yes, in the heat), lasagna, and maybe cheese latkes. I have lettuce, too. What's better, a salad or latkes? Both? (I know what's healthier!)

Baked chicken with rice and chickpeas

Saute an onion in some olive oil, add a can of rinsed chickpeas (or frozen mixed veggies, or cubed butternut squash, or nothing, or something else you like) and 2 cups raw rice, saute a bit then add 2 cups water (yes 2, not 4, yes I'm sure) season with salt, pepper and a little paprika (or whatever else you want, I've done this a billion ways and it's always amazing). Cover and simmer on low flame until water is absorbed. Thennnnn add 2 heaping tablespoons mayo (yes mayo, yes really, don't skip this) Mix and pour into a 9x13, smooth out the top. Remove skin from chicken, coat very thinly with mayo, arrange on top of rice and sprinkle breadcrumbs over the top (I use pereg) cover tight and bake on 350 1.5-2 hours. Only add water toward the end if you see the rice is burning at the edges. Most times I don't add any water and the rice is abnormally delicious, like it's not even fair to other rice recipes that this is so good. Enjoy!!

If you are on Facebook its in the I don't cook but give out recipes group.

thank you so much for sharing.

I'm curious if I can make this dish with brown rice. The few times ive done a chicken and rice together - the chicken is cooked but the rice is still raw.

Thanks again for posting the recipe. I appreciate it.

Omelettes/scrambled eggs and toast, maybe with some cheese.
Cut up melon for dessert.
Coffee of course for DH and me.
That's all we ever eat after a fast, especially when it ends so late.
Maybe some ice cream or cookies an hour or two after breaking the fast.
There's always tomorrow to make up for today's lack of eating.
It's more important to replace fluids, especially in the summer.

I like to make one thing that everyone can eat at different times. Since I'm not fasting, I'll eat with the kids and dh later.

The chicken recipe sounds great. Is it boneless chicken breast or chicken on the bone?

The chicken and rice is legs and thighs. I think breasts would get way to dry.
