ISO chicken recipe with semi dry/semi sweet wine

I have most of a bottle of semi dry Zinfandel left over from shabbos and would like to use it in a chicken recipe. Ideas anyone?

Zinfandel chicken from Kosher by Design Entertains:

1 1/2 c red Zinfandel wine
1/2 c. olive oil
3 Tblsp soy sauce
2 Tbls Dijon mustard
1 Tblsp parve Worcestershire sauce
1/8 tsp black pepper
3 scallions, sliced
1 chicken in eights

Prepare marinade by combining all ingredients except chicken in bowl. Mix well.
Place chicken in zip lock bag and pour marinade over it, making sure that chicken is immersed in liquid. Seal bag and refrigerate at least 4 hours or overnight.
Remove chicken from marinade and spread in baking sheet. Bake 1 and 1/4 hour in preheated oven at 350 until chicken is cooked through. Broil for last two minutes to crisp skin.

KBD also has the Greek garlic chicken which is very good. Uses dry or semi dry white wine.

It is a good and easy recipe that I've kind of forgotten about for some reason, but when I saw Zinfandel in your post it's what instantly came to mind. It's perfect for using up an open bottle.

Chicken Marsala might work with another wine.

Coat chicken cutlets in flour and bake covered for around half an hour.

In the meantime, sauté onions until soft.
Add mushrooms and sauté for around ten minutes.

Add around 1/4 cup white wine and continue cooking until thickened.

Pour the onion mushroom mixture on top of the chicken and bake uncovered for around ten minutes.

(Sorry about the vague measurements!)
