Off the top of my head
Spanish Tortilla (egg and potato omelette cooked in a frying pan and cut in wedges)
Veggie fried rice
Sweet and Sour Eggplant
Pasta with any sauce and veggies no cheese
lentil tacos cheese optional
baked falafel with toppings

he likes vegetables potatoes, tomatoes, beets, cucumbers, lettuce
eggpant, peppers, onions
he likes falafel so that can be 1 night

I stuff peppers with cooked quiona, corn and black beans. I usually melt cheese on top but you dont have to.

Vegetable or potato frittata with warm crusty baguettes and a leafy salad
Falafel with tehina and avocado relish
Grilled vegetables in wraps sprinkled with black beans or the like
Tomato/avocado/quartered egg salad with garlic bread and a tomato rice soup
Lentil burgers buns piled with garlic pickles, red onion slices, ketchup and mayo dip, fries on the side if needed
That should get you through the week Smile

thanks mrentro for getting the ball rolling on this.
I made a baked omelette for a chol hamoed pesach meal this year that was a real hit and easier then making individual omelettes.

other meals:
falafel
pasta with pesto (I used walnuts instead of pine nuts b/c they're cheaper and no one can tell the difference)
tofu stir fry w/jarred sauce
polenta with fresh mozzarella and sauteed cherry tomatoes (TJ's has a ready made polenta that you slice and pan fry) the whole think takes 15 minutes but you do dirty 2 pans
and sometimes my kids just have cereal - but I'll put in some cut up fruit so I can feel slightly less guilty about that

I'll put them under different protein source.

Fish:
- tuna salad, salmon salad
- poached salmon
- poached cod salad (aka mock lobster salad, break into larger chunks, dress with mayo-ketchup)
- fish pie
- fish chowder (technically minestrone with fish, haddock, cod)
- fish pakora
- fish cakes, fish patties
- fish loaf (salmon, tuna)
- Sephardi fish balls (unsweetened gef fish balls cooked in tomato sauce)
- breaded fried fish
- pan-fried mackerel (marinate or use herbs)
- pan-fried sole, seabass, snappers
- steamed sole with ginger, salad onion and soy sauce
- miso or soysauce marinated cod/haddock
- teriyaki cod/salmon
- fish curry
-Tunisian fish omelette (chopped white fish, chopped herbs)

Eggs:
- omelettes
- crustless quiche (grate/chop carrots/courgettes/mushrooms/onion etc, sautee and squeeze liquid, add beaten eggs, herbs, bake till puffy and browned on top)
- scrambled egg and tomato over pasta
- frittata
- hamin (brown) eggs

Legumes
- chickpea curry (on its own, or with spinach)
- mashed chickpea patties (with chopped herbs/salad onion)
- medjara (similar to brown rice and lentil casserole posted, except with extra fried onions, delish)
- koschari (similar to medjara, with small pasta, and also with extra fried onion)
- foul made with dried fava beans
- lentil stew
- lentil loaf
- lentil curry
- black bean soup
- vegetarian tajine with chickpeas, root vegetables
- vegetarian couscous with chickpeas and roots vegetables

Other vegetarian protein/foods
- tofu stir-fry (marinate tofu in soy/teriyaki beforehand, use extra firm)
- tempeh curry, tempeh stir-fry
- lasagne with vegetarian mince
- spag bolo with vegetarian mince
- non-meat meatloaf (aka 'loaf' with vegetarian mince)
- vegetarian cottage/shepherds pie
- bulgher pilaf with chickpeas
