Anyone have any ideas-for dairy or parve meals-with no tomato and not a lot of fat?

Baked pumpkin penne is delicious. Use fat free milk and part skim mozzarella cheese.
Pan seared tilapia and quinoa salad
Lasagna Verde with fat free cottage cheese
Lemon garlic salmon or salmon persillade
Baked falafel with Israeli salad, sauerkraut and just a bit of tehina
Baked frittata and butternut squash fries with a leafy salad

Easiest side dish ever: cut a butternut squash in half, scoop out seeds, spray with Pam, roast with flesh side down at 350 for hour and half (depending on size of squash). Let cool, peel off skin, sprinkle with salt if desired (I don't think it's even necessary- taste delicious without it) and enjoy.

using vegetarian hot dogs (I like yves brand):

*saute onion and zuccini and peppers or whatever else you like until tender, season to taste, add cut up hot dogs in 1/2" cubes, saute for a minute more, add rice, then water. cook until rice is done.

*put 6 cubed potatoes, 1 sweet potato, 1 chopped onion, and 1 package of cubed hot dogs into a 9x13 pan. add 1 tablespoon olive oil, 1 TB salt, some black pepper if you like, and a generous sprinkle of paprika. mix thoroughly. and bake covered for 1 1/2 hours.

I just went to check the package.
each hot dog has 1 gram of fat. is that a lot?
they also have 50 calories, and 8 grams of protein each.

I'm sorry I wish I knew how to make a vegetarian chili that tastes good, but I know Ra mom has loads of cooking advice and experience so maybe she can help out here.

I like this veggie chili a lot and it freezes well. http://www.myrecipes.com/recip.....salsa

If you like mexican type foods you can make so many low fat things.

The great part in this recipe is that it's not fried just baked
Ingredients
1 eggplant cut into 1 inch round circles
1 egg
1/2 tbs mustard
1/2 tbs chili sauce
1 tsp paprika
1/2 tsp salt
bread crumbs

mix egg, chili, mustard and spices and dip the eggplant slices and than breaded them
align on a baking sheet that is greased with oil a bit more than usual (this is because it's not fried)
bake in a preheated oven on 350 for 25 on one side and than add. 15 minutes on the other side

Use fat free milk instead of cream and a mix of blended fat free cottage cheese and low fat mozzarella to sub the shredded cheese.
