I am looking for quick and easy throw everything chopped or not chopped into a tray so it can cook itself kind of meals.
Tonite for dinner I cut up chicken cutlets with broccoli , drizzled with olive oil and onion soup mix and tossed it in the oven. ... I have no idea how it is going to turn out. Hopefully good.
Any ideas, it can be a pareve, dairy or meat meal all in one.
I am trying to keep the cooking simple this summer.

I individually wrap chicken or fish servings with cherry tomatoes, sliced zucchini, summer squash - garlic, spices, herbs and then cook for about 20 minutes or so.
There is a good cookbook that is called Sheet Pan Recipes or something like that. You could check it out of the library and it might give you some inspiration. Not all recipes are kosher of course but many can be made so or inspire.
I do a lot of one pot meals which combine the protein, carb and veggies. The benefit to these is that they also reheat very well so I will often do a double recipe and freeze for an additional dinner.
Roasting a chicken also lends itself to being reused for other dinners and it's just as easy to roast two or three chickens at the same time. Roast chicken is pretty easy to do as long as you are home to take out. Many good recipes use "rotisserie chicken" so you can either buy already made chicken or just roast your own ahead of tme.

Rice and chicken cassarole
Chicken pieces (bone-in with skin)
Rice
Frozen veggies (we like peas and carrots, but you can use any)
Water (2:1 to rice)
Salt (to taste)
Pepper (to taste)
Tumeric (optional)
Any other seasonings to taste
1. Measure out rice, and put into a pan.
2. Measure out water, (double of ric) and pour into a pan.
3. Add salt, pepper, tumeric, to taste.
4. Add frozen vegetables.
5. Season chicken to taste, add to the pan.
6. Foil pan tightly.
7. Bake at 350 for 1- 11/2 hours until water is completely absorbed, rice is cooked and chicken is completely cooked
8. Uncover and bake for another 30 minutes until chicken gets a little color.
