We temporarily don't have a gas top or oven, so my only option is my toaster oven which is dairy/parve.
Pretty please with a cherry on the top?
We're getting bored of other people's food.

This is delicious , not typical lasagna, the spinach adds a nice flavor.
Extra-Easy Spinach Lasagna
• 1 (15 ounce) container ricotta cheese
• 1 (10 ounce) package frozen chopped spinach, thawed and well drained
• 2 cups shredded mozzarella cheese
• 3 cups Prego Italian Sauce
• 6 uncooked lasagna noodles
• 1/4 cup water
1. Mix ricotta cheese, spinach and 1 cup mozzarella cheese.
2. Spread 1 cup pasta sauce in 2-quart shallow baking dish. Top with 3 lasagna noodles and half the spinach mixture. Repeat layers. Top with remaining pasta sauce. Slowly pour water around inside edges of baking dish. Cover.
3. Bake at 400 degrees F for 40 minutes Uncover. Sprinkle with remaining mozzarella cheese. Bake 10 minutes or until hot. Let stand 10 minutes.

Baked risotto, roasted veggie tacos with oven rice, enchiladas, nachos, no boil mac and cheese or ziti, do you have a dairy crockpot? I can give you some ideas for that too.

lovemytwins - that sounds good. You do this with uncooked noodles and the noodles become soft at that end?

No dairy crockpot.

Crustless Spinach Quiche
2 large eggs lightly beatened
1/2 c. milk
1/2 c. mayonaise
1 small onion chopped
2 (10 oz.) pkg frozen chopped spinach- thawed & drained
3 Tablespoons cake meal (can use whole wheat flour instead)
2 c. (8 oz.) shredded cheddar cheese
2 c. shredded mozzarella cheese
Preheat oven to 350 degrees. Combine eggs, milk, mayo, onion, spinach, ww flour & cheddar cheese in a large bowl. Pour into a greased 9 in round or 8x8 in baking dish. Sprinkle with mozarella cheese.
Bake 30-45 mins or until puffed in center and knife inserted near center comes out clean. (9 servings)
(I put more chopped spinach to make it less fattening... even if you dont exactly follow the recipe, it comes out delicious!)

Pizza eggplant rolls
1 large eggplant
1 onion chopped
slices of cheese
tomato paste
2 tbs oil
spices: sugar, salt black pepper ext.
Slice the eggplant in very thin slices
roast in oven till soft and cool
mix the tomato paste w/ the oil and spices put a thin layer of the sauce on each eggplant slice top with a slice of american cheese and roll
bake for additional few minute till the cheese melt

Yes with uncooked noodles. I made it for the first time yesterday and it came out great. You need to add water to the pan before you cook it. I added a little more than 1/4 cup.

Roasted Eggplant pizza

No Fry Eggplant Parm
Layer in 8x8 pan (4 servings):
cornflake crumbs
sliced, peeled eggplant
cornflake crumbs
pizza sauce
shredded mozzarella cheese
Repeat the above 2 - 3 times until you run out of eggplant.
finish with eggplant topped with cornflake crumbs.
Baked covered at 375 for 1 hour 15 minutes.
Mix 8 oz tomato sauce
2 tbs. oil
1/3 cup. sugar
pour on top
Baked uncovered for 20 minutes.

Some soup ideas. Tried and true.
French Onion Soup
• 4 large onions
• 4 tablespoons butter
• 4 tablespoons flour
• 1 ½ teaspoons sugar
• 6 cups water
• 4 teaspoons onion soup mix
• 2 teaspoons soy sauce
• ½ cup white or sherry cooking wine
• ¼ teaspoon salt
• 1/8 teaspoon pepper
• Optional pinch of thyme
• 4 oz. muenster, mozzarella or swiss cheese
• Croutons
Slice onions into thing rings. Sauté in butter over medium heat 15-20 minutes, stirring until onions are golden brown. Add sugar, stir and sauté 2 more minutes. Add flour and mix well. Add 1 cup of water, stir until smooth. Add remaining water, soup mix, soy sauce and wine. Boil, reduce heat and simmer covered for ½ hour-45 minutes on a low flame. Season with salt and pepper, adding more salt if necessary. To serve place cheese on the bottom of each bowl.
Butternut Squash Soup
• 3 lbs butternut squash
• olive oil
• 2 extra large onions, chopped
• 1/8 to 1/4 c. chopped parsley (I used flakes)
• 1 1/2 t. salt
• 4 1/2 c. water
• black pepper
• 2-4 cloves garlic, crushed
Preheat oven to 375. Cut squash in half lengthwise, scoop out the seeds, and bake cut-side down on a foil or parchment lined baking sheet. Drizzle some oil over the butternut squash and bake for 40-50 minutes or until tender. Heat olive oil in a large pot over a medium heat. Add onions and parsley and saute about 15 minutes or until lightly browned, adding drops of water so it does not stick. Add remaining ingredients and bring to a boil. Partially cover, reduce heat and simmer 45 minutes. Puree until smooth.

Buy a second crockpot, so you have one for dairy.
Cut up or grated cheeses, whole Kasha, broccoli, cauliflower, throw in a little Quaker oats oatmeal. It has no taste, it's just a grain like any other. Bulky, cooperative, nice texture. Beat in a few eggs, and a tablespoon of oil. Frozen vegetables such as green beans and corn will be fine too. A jar of salsa. A bag of little potatoes.
All that will do fine in the crock pot overnight.
Get in lots of jars of Medium Salsa.
Shakshouka. That's hot salsa with eggs broken onto the surface to cook. You cover it so the steam cooks the eggs.
