It's really so simple, just beef and spices. Think roast beef instead of cholent. We like to take the beef out, shred it and put it on top of salad. But you can put whatever veggies you like into the pot. We usually go with mexican flavor or Indian curry. No beans and no starches. Perhaps think about it like a beef soup, rather than trying to replicate a cholent.

Didn't think of that thanks! What cut of beef do you use?

I don't know Atkins, but cubed or thickly sliced vegetables may be good. Like a chunky soup. Either as a roast or cubed meat

I have done just flanken and onions (with salt and spices) in the crock pot and then made rice separately in a rice cooker for those who want to have their meat over rice.

I just have to let you know that I'm not so into cooking. I prefer to keep things simple. And I love to go heavy on certain spices.

Beef of any kind gets:

lots of paprika
dash of cumin
hot paprika or chili flakes
fresh coriander
green peppers

or

Chicken, deboned gets:

coconut milk
lots of turmeric
ginger
hot paprika
nutmeg
dash of cumin
fresh coriander
peppers of all colors

I don't use garlic, onion, or black pepper, so if you do, la'briut.

I do stew meat cubes with tomato sauce and diced onions, cumin, and garlic powder. I also put in a cubed sweet potato but I don't know if that's allowed on Atkins.
