Hi, I found this great recipe for peanut butter cookies! It's really yummy and simple to make!
Gluten-Free Peanut Butter Cookies
Makes 36 cookies
Ingredients:
2 cups creamy peanut butter
1 1/2 cups granulated sugar
1/2 cup packed light brown sugar
2 large eggs
2 teaspoons baking soda
2 teaspoons pure vanilla extract
1/2 teaspoon kosher salt
Directions:
Heat oven to 350° F.
Using an electric mixer, beat the peanut butter and sugars on medium-high speed until fluffy, 2 to 3 minutes. Reduce speed to low and beat in the eggs, baking soda, vanilla, and salt.
Roll heaping tablespoonfuls of the dough into balls and place on parchment-lined baking sheets, spacing them 2 inches apart. With a lightly floured fork, press the dough to a ⅜-inch thickness, making a crisscross pattern on top of each cookie.
Bake, rotating the baking sheets halfway through, until the edges are set, 10 to 12 minutes. Cool slightly on the baking sheets, then transfer to wire racks to cool completely. Store the cookies in an airtight container at room temperature for up to 5 days.

I have a similar recipe, but with chocolate chips - and fewer ingredients!
Flourless Quick Peanut Butter Cookies
1 c. peanut butter, chunky or creamy (I like chunky)
1 c. packed brown sugar, light or dark brown
1 large egg, slightly beaten
1 tsp. baking soda
1 c. chocolate chips (I found mini chips work better)
1. Heat oven to 350o
2. In medium sized bowl, beat together the peanut butter, brown sugar, egg and baking soda until the mixture is smooth and well-blended. Stir in chips until evenly distributed.
3. Drop the dough by slightly rounded teaspoonfuls onto ungreased baking sheets, spacing the mounds about 2 inches apart.
4. Bake one baking sheet at a time in the 350o oven until the cookies are puffed and slightly golden but still soft to the touch, about 10 minutes. Let the cookies cool on the baking sheet on a wire rack for about 5 minutes. Then transfer the cookies to the wire rack. Let cool completely.
