I need to make a fruit pie/tart/cake, whatever you want to call it, for a additional side dish for a seuda we are making. I want it to have lots of color so no lattice or crumble on top because then it tends to have more of a brown coloring which will be boring next to the other food on the plate. Also want to make it mini so I don't have to cut portions when serving. Anyone have a good recipe for this?

If you want mini, easy, colorful:
Fruit topped custard pies
Buy the small tart pie shells. (bake if necessary, paint bottom with beaten egg yolk with drop of salt and bake a bit longer).
Either Make or Buy Custard (Baker's Choice Custard works well).
Fill tart shells.
Decorate tops with kiwi, blueberries, strawberries, mandarin oranges, thinly sliced plums, etc.
Paint with a thin layer of melted jam (like apricot flavored).
Or you can make open faced blueberry tarts in mini tart shells.
