I grilled my chicken without the skin and the top got very hard. Anyway to fix it and make it edible? Could a sauce soften it?

There really isn't any way to "soften" overcooked food.
I would cut off the top part of the chicken and then use the rest in a way that disguises it. A real chicken salad or cut up in a sauce and simmered gently - you would just want to heat the chicken - not cook it.
