I'm having guests over for a weekday lunch. I'm looking to serve something nice, not super fattening, with a few dishes to choose from.
Any suggestions?

Salmon, salad, tuna wraps, vegetable soup, breaded eggplant baked with tomato sauce, fruit salad (dessert), spinach cheese crustless quiche (or any other soufflé type dish), egg salad, crudités, tofu (here's a recipe in case you need: marinated in teriyaki sauce, dipped in cornflake crumbs, baked at 400 for ten minutes on each side), cheese assortment
