Sautée onions, add frozen spinach and sauté. Add ground meat to pan and stir with the onions and spinach on a med flame till cooked. Add spices. Serve over rice or mix with linguine or make into lasagna rollups. It's delicious!!

I second shepherds pie. (really cottage pie - shepherds pie is made with lamb) you can do individual ones to be fancy if you have little dishes to bake them in.
I like this recipe. Obviously I skip the cheese and use margerine.

Debone the chicken pieces (Capons) stuff with well seasoned ground beef.
Or
Make a ground meat roulade.
Take ground beef season add eggs and breadcrumbs, the same mix you use for meatloaf. Then take a piece of foil and pat flat the meat on the foil.
After take spinach, squeeze all the water out, add spices and 1-2 eggs.
Spread spinach mix on top of ground beef. Using the foil to help roll it up like a jelly roll. Bake at 375 until fully cooked.
If the kids don't like spinach make a different type of stuffing, or stuff with hard boil eggs.

AFAIK, Daiya cheese does not contain soy. Just mentioning in case there are those who would avoid it for that reason.
