Trying to stock freezer for YT, looking to make a sweet potato/chopped meat roll or knish. What is the best way to make this- freeze totally raw or cook first? Any suggestions or specific recipe would be very much appreciated. TIA

So how do you suggest I do it? Spice meat mixture, add egg and breadcrumbs, spread on puff pastry, top with sweet potato, seal and freeze?

I've never made sweet potato knish but it works great for meat. Just use fresh raw meat, not defrosted because once defrosted you have to bake right away. Which is ok, knish defrosts and rebakes really well, but it's marvelous if you bake a raw prepped knish roll.
