Making custard in advance?

I'd like to make this pie for the first night of Rosh Hashana. http://kosherscoop.com/2012/01.....-pie/

I plan to make the pie crust early this week and freeze it. I can assemble I on Motzei shabbos or Sunday erev RH, but my question is, how much in advance can I make the custard?

I happen to have 2 egg yolks from something I just made and would love to take advantage of them and make the custard.

Does custard freeze and defrost well?

I make a custard pie and I always have to remember to pull it out of the freezer in the middle of the meal, or it will be too hard to cut.

Frozen custard is ice cream without the aeration. I'm not a fan of freezing egg custards myself. I don't enjoy the way the texture changes.
