Anyone have recipe for cinnamon buns using leftover challah?

I have too much leftover challah and prefer to use it to make kokosh cake, cinnamon buns, danishes, etc. for yom tov instead of the typical (French toast, breadcrumbs, or challah kugel). A recipe would be greatly appreciated!

I believe you can make cinnamon roll flavored bread pudding and the like but not necessarily cinnamon rolls.

You can also make things like baked ziti made out of bread cubes instead of pasta, use it in French toast casserole in the oven, Caesar salad, french onion soup...
