I once ate as a guest in a house and they served mini rice kugels, made in mini bundt pans. They were so pretty and tasted great! However, when I found a rice kugel recipe (heimish kitchen) and tried it, they fell apart. Anyone have any idea how to make these?

I only made the Hemish Kitchen recipe. It's really yummy! Make sure you use the right amount of each ingredient and bake it until it looks pretty solid. It should probably be brown on top.

the Lub cookbook recipe is either plain or with pineapple and is always a hit.

The heimish kitchen one IS yummy. I've had great success with it, except when I put it in the mini bundts. Maybe I have to cook it at a different temp./ diff. amount of time? I just looked at the Lub. one- looks similar, but I can try it!

Greenfire, rice kugel is one of the easiest kugels to make b/c you use leftover rice! No peeling like potato kugel or boiling like lukshen kugel . . .

wow I'm so happy someone already asked about this. I have leftover rice and don't feel like stuffing chicken or making fried rice.. or anything else. Rice Kugel popped into my head - how do you make it? Would someone please post a recipe?

thanks. im getting so bored of the same recipes for shabbos. trying to vary but with simple easy recipes as have no energy to cook at the moment. and want stuff that freezes so I can make in big quantities for when I have my baby pg

I used to make this a lot with pineapple. I like it but DH hates it.
from spice and spirit:
1 cup uncooked white rice
2 cups water
1/3 cups raisins
4 eggs, lightly beaten
1 cup orange juice
3/4 cup sugar
1/3 cup oil
2 tsp vanilla extract
1/4 tsp cinnamon
1/2 tsp nutmeg
Cook rice in water til soft but not mushy. Soak raisins to soften.
Preheat to 350.
Combine ingredients and pour into 9x9 greased pan. bake for 1 hour.
variation: omit OJ and raisins and substitute 1 cup crushed pineapple.
you can use brown rice, just use 2.5 cups of water and cook the rice for 45 min.
