Anyone know what we as already-Shabbos-observant-Jews are supposed to be doing for this project? I read an article about it on Aish.com, and it sounds so beautiful. Maybe this could be the "just one Shabbos" that we're all waiting for. I want to be in on it, but how?

Invite a not yet shobbos observant Jew to a seuda! No fanfair just so every Jew should get a chance to taste shobbos. It's a gift for all of us and some haven't experienced it yet. It's not meant for kiruv per say, more like achdut.
Also, contact local community leaders to see if they arranged for challah bake, speech, kiddush, workshops etc.

Yes, where do you live? The Shabbos Project is quite major in many communities! Invite over a non-religious/becoming-religious acquaintance so they can experience Shabbos. Many communities have programming that your guest can attend. In most places the Shabbos Project is preceded by a Thursday night grand challah bake and ends with a Havdalah concert motzei Shabbos.
If there is nothing happening in your community, then it's not too late to start organizing!

Does anyone know if there are any shul and/or after meal programs in BP, Brooklyn? I would consider inviting if I had support.

If you sign up on Shabbat.com you can be a guest or a host and non affiliated people can request an invite for a meal or vice versa and they have references etc
