Too little oil or eggs. ETA I happen to love it this way. I make mine purposely like this

Also how are you grating the potatoes ? It sometimes makes a difference.

Thanks I grate them in the Braun I switched used kugel blade for half and noodle blade half it seems to have a better consistency
