ISO gluten free meatball recipe that is baked before combining with sauce.

I'd like to accommodate a family member that is off gluten and sugar. I'd like to bake the gluten free balls separately and then make a separate sugar free sauce for him (my recipe uses breadcrumbs as a filler and I add it raw to a marinara and cranberry sauce mixture).

Anyone has a gluten free recipe that will work?

I dont bake my meatballs but you can use mashed potato flakes in place of breadcrumbs

Gluten free corn flake crumbs or GF panko are available and work well too.

Both have sugar, so it won't work.

Wont work because of dietary restrictions (do u need a grain free paleo type substitution?) or wont work in the recipe... They do work out well in meatballs...

ETA my gf panko bread crumbs have 0.2 grams of sugar in an entire 1/4 of a cup in the form of honey. Does that count?

I just spice up ground meat, roll into balls, arrange on a cookie sheet and bake at 350 for 25 minutes.

I use bobs red mill brown rice cereal as a filler. And I bake my meatballs

When you do this you need to make the sauce with a little extra water because the rice will soak up the water. But they come out wonderful

Put in 2 crushed garlic cloves and 3/4 tsp salt for each pound of meat. The rest of the seasonings you can play around with

I don't bake my meatballs, but I use gf cornflakes crumbs instead of breadcrumbs. Can you just make the gf meatballs and then cook them raw in the sugar free sauce? Why do they need to be baked first? You could cook them in water instead of sauce if you want.

Bob's Redmill also makes GF oats. They might work out.

If you don't over bake the meatballs, it helps them hold their shape better in the sauce. If you cook them in the sauce, they can fall apart.

No, they're firm and taste delicious. But I imagine if you use white ground chicken or turkey they would be dry. I use all meat or dark ground turkey.
I've baked them and served over rice and topped with mushroom sauce. Or simmered in honey garlic sauce. Or served without a sauce over a Caesar salad or over garlic spaghetti.

If these are baked with just spices, I am envisioning them the way I make mini sliders...just round... would never have thought to then add a sauce as they are already done and dry like a burger...

Uncovered. I bake on roomy cookie sheet for 20 minutes or up to 25. In a 9x13 pan for 25-30 minutes. Good eaten right away or added to sauce right away.
