My kids love the potatoes which I bake with chicken and sweet sour sauce.
However I want to make these potatoes but without the chicken. Can I just use sweet sour sauce for the potatoes or do I have to change the recipe like adding water or adding different ingredient?
Also how would I need to bake them.

Cut the potatoes up the way you regularly do, pour sweet and sour sauce over em, cover the pan well and bake on 350 for a couple of hours. Check on them every now and then to make sure they are baking well. I do this all the time and its delicious!
