Are these two interchangeable in a recipe? It calls for old fashioned oatmeal,but I bought quick one minute quaker oats...

Probably can but take into account that the results will be slightly different. There will be less texture and chew if you sub the quick cooking oats.

I think that the difference is more noticeable in really dense things like cookies. It shouldn't be such a big deal in muffins.
