I've seen it in ready salads, and I've seen it as sumiri in the freezer section. But now that I actually want to make it, I want to know if it's raw, needs to be cooked, how, etc.

It is not raw. It's processed pollock. It just needs to be defrosted. It's delicious in salads.

Kani is made from sumiri. Kani is processed and cooked, not raw.

Surimi is made from a variety of cooked fish (today it is uses fish otherwise wasted during the drift netting process). (While surmai is actually a fish that is a member of the mackerel family.)

It is mixed with flavoring and coloring additives, often times bleached and certain preservatives are added. The paste itself is often flavorless. Some texturizers are also used in the process.
ETA: I know too much about this stuff, I was on loan to a sumiri lab on campus for a few months.
