There are lots of recipes on the internet, esp now because many people make sugar cookies (to use with cookie-cutters) at xmas time.

Ooooh, I just made a great one.
Chewy and crisp.
Some do spread a touch but they're so good it's worth it. And they do still retain the shape.
Cream:
1 cup margarine
1 cup sugar
Add:
1 teaspoon vanilla
1/2 teaspoon almond extract (I skipped because I ran out.)
1 egg
Combine and Add:
2 teaspoons baking powder
3 cups flour
Yield: 3 dozen
(Didn't count so I don't know if this is accurate.)
350 for appx 8 minutes

This is my go to cookie dough to use with cookie cutters (and I like it has no margarine)
I don't know if this is a great recipe to use if you want to decorate with royal icing and have a perfect cookie because it does puff slighly, but it makes a very good dough that makes great driedel cookies.
Sugar Cookie dough
Mix together with mixer or knead by hand:
3 eggs
1 cup sugar
3/4 cup oil
2 1/2 tsp vanilla
2 1/2 tsp baking powder
2 Tbsp Orange Juice
4 cups flour. (add more if too sticky, I normally end up using about 4 1/2 cups. When done the dough should be very workable)
Roll and cut with cookie cutters.
Optional:
To paint cookies mix egg yolk with food coloring and use small paint brushes.
Paint with egg and decorate with colored sugar.
Bake at 350 for approx 8 - 9 minutes depending on the thickness of the cookies.
