I'm looking for alternatives to flour that are low carb. Gluten doesn't matter to me, I care only about the carb content. What is available that makes good pancakes, muffins, cakes, etc?

Zucchini can be cut into long pasta threads. This is typically used as a pasta substitute for people on low-carb diet. I use a spirooli to cut the strands and it's very yummy even though obviously not pasta.

Yeah, I know about vegetable "pasta", that's not gonna hit the spot for me. Guess pasta is just gonna have to be a treat. At least I have a way to get my baked goodies fix.

There's also miracle noodles but not everyone can handle the putrid smell aroma.

Zucchini noodles in alfredo sauce is actually really good. And meatballs with cauliflower rice. It's about the rich accompaniment.
Also cauliflower crust pizza or almond crust pizza.
