Depends on the franchise. Don't expect a gift card to work in a different country. Your best bet is ordering something online with the gift card and then shipping it overseas.

You can purchase a UK gift card online and have it mailed directly to the recipient. Would that work?

I think online retailer like amazon may work. Regular store cards /gift cards /vouchers definitely won't work. Franchises are often different, and there's foreign exchange complication. My Starbucks card here didn't work in US, Gap gift card my family received from the US didn't work here.
