Alright I'll just give you a recipe so you can't start cooking already.

Here is a longer way:
- peel some beets and cook in salted water, you may add some lemon juice or vinegar to preserve color
- meanwhile sauté some onions and grated carrots
- peel and dice potatoes, shred cabbage.
- pull out beets, put potatoes into the pot and let cook
- grate cooked beets
- add cabbage and grated beets to the pot
- spicing up: use salt, pepper, sugar, some acid like vinegar or lemon juice, add tomato paste. OR: shortcut by using ketchup! It's essentially a mixture of tomato paste, vinegar, salt and sugar.

A shorter cheat way:
Sauté onions and carrots right in the pot, then add water, salt, peeled grated beets, then potatoes, cabbage, and spice up.
Much quicker and no pans to wash.

Beans and meat are optional.

You bet! Parve borscht that is to be served with sour cream!!!! Yum.....

And serve borscht with pumpernickel or a decent whole wheat bread and garlic on the side. Or rolls dipped in garlic sauce. Hey, I'm now craving borscht too lol.

For the meat option traditionally use a marrow bone. If you have meat lovers put in some kalechel to have actual pieces of meat in the soup.

Thanks, everyone! Definitely prefer the meat kind, but I've also had vegetarian with sour cream which is delicious.
Didn't cook it tonight, but winter is just kicking in over here, so there will be many opportunities!
What's kalechel? embarrassed

Cook up beets in water till soft put in blender 2 eggs juice of a lemon 1/4 cup sugar put in the liquid of the beets blend

Chuck kalechel- or whatever the spelling is )).

It's an type of meat that looks like an entire oblong muscle. Comes out very soft and not chewy in soups and stews.

Traditional borscht is made with meat and eaten with sour cream by non Jews. But there are parve versions of it, with beans or mushrooms, that we can eat with sour cream. It's called постный (lean) borscht.
You can add a spoon of mayo or parve sour cream to your meat borscht.

And then you take the end piece of a dark rye bread and rub it with garlic. And eat it with a nice hot, hearty bowl of borscht. Mmmm.
You don't need anything else. This is a complete meal.
