Butternut Squash Soup (My kids love it)
No recipe really.
I saute onions (but if no time don't even saute), fresh garlic, chunks of butternut squash.
Lots of salt and pepper.
(If I'm in a rush I cut it into smaller pieces so it cooks faster and I pour in boiled water.)
I remove some water into bowl and blend it with stick blender. Then add water back in until it is thickness/thinness you want. I do this because I never know how much water!! Also another trick-I buy biggest ones they have because easier with peeling.

You can make almost any kind of simple veggie soup you want with a few simple steps.
1. Saute onions and garlic (or shallots or leeks).
2. Add the vegetable(s) you want to cook, chopped coarsely.
3. Add a potato or two for a creamier texture.
4. Cover with water, bring to a boil, simmer until tender.
5. Season with salt and pepper and whatever herbs or spices work well with your vegetable of choice.
6. Use an immersion blender to puree, then taste and adjust seasoning and thickness as necessary. If you want a chunkier soup, add some finely sliced veggies and simmer until soft.

This is my go to "quick soup" and it tastes wonderful too!
1 onion
1-2 carrots (peeled)
2-3 large zuchinni (unpeeled)
3 tbsp oil
2 quarts water
salt and white ground pepper to taste
In a 5-6 qt. pot, heat oil, chop the onion carrots and zuchinni into big chunks, dont bother dicing small. Sautee for about 10 minutes, stirring occassionally.
Add 2 quarts water (I use the pickle size plastic containers, and fill two of those) pour into pot , cover, bring to a boil...once it boils, add salt and small amount of ground white pepper. Cover , lower heat and simmer for half and hour....Then take an immersion blender (hand blender) and blend all the contents of the soup while it's still in the pot...the consistency comes out creamy and a smooth...it's yummy...taste...add salt to your liking if needed.

I didn't post the original recipe but I do very similar. (I leave out the potatoes because I don't want the starch but it does add a creaminess if you use it)
- Carrots
- Turnip (gives great flavor)
- Parsnip
- Zucchhinni
- Sweet Potato (if don't care about starch)
I sometimes blend it partial or fully.
I also sometimes throw in red lentils, yellow split peas or barley to bulk it up a bit. It increases the cooking time (especially the split peas)
I make a variation of this almost every week and keep it in the fridge for a quick snack.

I find the squash very difficult to cut, so I just buy the precut ones from the grocery- the whole soup takes 5 min to put together!

Dump one can of shoprite cream corn in pot add cup of milk or cream, basil fresh ground pepper
Some bacos. If you like that. Heat on medium for 10-15 minutes

Fast and easy to prepare or to cook?
Split pea soup with carrots and sweet potatoes
Lentils cook quick.
Lentils, split peas, barley- onion, carrot, sweet potato
Season with salt, cumin and curry.

pea soup
put in a pot
a few garlics

a package of frozen peas
some salt and pepper
boil for at least an hour
blend and you have a yummy soup!

Tomato Soup: 2 Cans Tomato Sauce, fill the cans with water and pour it into and squirt ketchup, add salt, pepper, and sugar. Add one handful of rice and boil till rice is cooked. Super fast, super easy and super yummy!!

I make this delish cauliflower soup
2T oil
1 onion diced
2-4 galic cloves crushed
2 large zucchini pealed and cubed
I.5 lb frozen cauliflower
1T salt dash pepper
Saute onion add zucchini, cauliflower, salt, pepper. Add just enough water to cover. Bring to a boil . Lower heat and simmer for 30 min. Blend
