ISO Healthier oatmeal cookie bar or similar dessert recipe

So I have some oatmeal cookie recipes that are healthy alternatives to cookie cookies. But I don't have time to roll out cookies today. Anyone have a similar type of recipe that can be made in a cake pan?

I made healthy chocolate muffins last week and healthy brownies the week before so I am looking for something non-chocolate but yes-tasty that can be made on the quick side for shabbos dessert/snack.

I've also made a recipe with oatmeal, honey and peanut butter. There are tons of variations of it online if you google oatmeal peanut bars, but I don't know the exact recipe I used.

Thanks, but I'm looking for a cookie/cake/cupcake concept, not granola bars. To serve for dessert on Shabbos instead of unhealthy cakes.

I have 1 with cornflakes and oatmeal and wheat germ. it does have sugar though, is that good?

I'm ok with sugar, just not tons. I usually sub honey and do fine. But I think I'm out of time for today Sad We'll just have to do without this week.

We've made oatmeal chocolate chip cookie bars. I don't know how healthy but there's half the amount flour as regular bars due to the oatmeal and there's oil instead of of other fats and they are delicious.

Oatmeal Chocolate Chip Bars

1 cup oats 
1/2 cup dark brown sugar 
1/2 cup sugar 
1/2 cup oil 
1 egg 
1 tsp vanilla extract
1 tsp orange juice 
1 cup flour 
1/2 tsp each baking powder, soda, salt 
1 cup chocolate chips

Mix. Spread into 9x13 pan. Bake in oven preheated to 350 for 30 min. Cut into squares.

If you're not into such sweet treats, you can definitely cut down on the sugar.

What's with the 1 tsp orange juice? I have never seen anything like that in a recipe. I have never measured such a small amount of any liquid other than flavoring.

It's the right amount. Not sure what it's about but I think it's acid for the soda and powder.

I made baked oatmeal for the first time last week and it was yummy.
It had the consistency of a crumble or a soft oatmeal cookie.
I think it can do double duty as a dessert.

Sub any parve milk substitutes that you like to bake with.
I added cinammon and a bit of salt to the recipe. I also used craisins instead of the raisins.
Next time I make it I'm going to add a touch of vanilla too.
Obviously the nuts can be omitted but to give it more interest you could probably add a sprinkle of chocolate chips or some chopped apple or dates.
I baked it in a 7 x 11 foil pan and we ate it warm.

3 cups oatmeal
3 cups cornflakes
1/2 c flour
1 c brown sugar
1 c white sugar
1/4 cup wheat germ
3/4 cup oil
2 eggs
1/2 tsp baking soda
1/2 tsp cinnamon

Mix all together. Press into 9x13 pan. Bake at 350 for 15-20 minutes.
