Bake the eggplant slices instead of frying them then proceed as usual.
Or skip the crumbs and grill the eggplant slices before baking the eggplant parmesan.

Bake eggplant slices, fat free marinara sauce, light shredded moZerella cheese and I add a letcho between the layers

I make 2 options:
Eggplant Parm Wraps
Slice eggplant thin. Spray with pam and bake at 400 and until cooked through.
Place wrap in sandwich maker, spread with pizza sauce or marinara sauce. Sprinkle with Shredded low fat cheese. Layer on the baked eggplant.
Fold Wrap in half and bake in sandwich maker.
Baked Eggplant parm
This is pretty healthy until the top layer (need sub for oil and sugar ?)
Layer in a pan 8x8 for small eggplant:
Bread Crumbs
Sliced eggplant
Bread Crumbs
Sauce
cheese (low fat)
Repeat until eggplant is finished.
Finish with layer of eggplant topped with bread crumbs.
Cover tightly with foil and bake at 400 for at least an hour.
Uncover.
Pour on top 8 oz tomato sauce 3 Tbsp Sugar and 2 Tbsp oil.
Bake at 425 for 15 minutes.

I bake the eggplant slices. Use only eggwhites, not the whole egg. I make my own tomatoes sauce, cooking the onion and garlic in spray oil. (you can add extra chopped veggies into sauce if you like) I use light cheese, just very little. A bit of Parmesan on top if you have.
