How unhealthy is it to cook in foil pans on the stove top? So convenient to just dump after you're done....

I don't know about unhealthy, but it's unsafe. If you value your life and your home, at least don't try to fry anything in a foil pan. The oil will get hot enough to burst into flame because foil pans have too little mass to absorb the heat. For the same reason, food is much more likely to burn. Using a foil pan is not much different from putting the food directly in the flame, heat-wise, because foil pans are so thin. I have had oil burst into flame when I used a flimsy aluminum pan instead of a nice heavy frying pan--and that thin pan was far thicker than foil pans.
