Someone told me that he removed all his teeth so that he wouldn't have a problem with chametz on pesach. This doesn't make sense to me, or there has to be more to the story.

Not accurate at all.
The Rebbe was given some spiritual conditions by his own Rebbe and father in law as he got married.
One of them was to don't have new teeth (obviously when the current ones won't work anymore).

The Previous Lubavitcher Rebbe told the Rebbe before the Chasuna of the Rebbe to the Previous Rebbes daughter: not to put false body parts. It was a condition for all his son in laws
1) not to put in any false body parts
2) to farbreng shabbos Mevarchim
3) to stay up Thursday nights learning

So IOW, if he didn't have teeth it was because of these conditions, not a chametz chumra.
I assume the false body parts is something that is not a standard minhag but a personal hanhaga?
